We might be having a love affair with chicken thighs. Oh my heavens, we just can’t get enough! The other night we realized there was nothing planned for dinner. As a food blogger, how in the world does that happen? Well, it happens more often than you might think. That’s when inspiration kicked in. We browsed through the pantry and half-empty fridge searching for ideas. Luckily we found chicken thighs....

First, sheet pan recipes are amazing. Toss stuff on a sheet pan. Bake it. Come back in however long, and dinner is done. Cleanup is so easy!Second, homemade ranch seasoning. Many of the ranch pork chop recipes on the internet use the store-bought seasoning mix, and while you can use that in this recipe, I highly recommend trying my homemade mix. It keeps great for months and has so much more flavor than the store-bought version....

Once seasoned, they are baked in the oven, then finished under the broiler. The result: juicy and flavorful kabobs that everyone will love! Admittedly, grilling is the natural method for preparing kabobs. I do have this excellent recipe for grilled chicken skewers and I make them often in the summer.
