Do I have to use ground pork with these healthy ramen noodles?
Nope. We like ground pork because it cooks up fast and adds extra flavor. You can, however, use another leftover protein like pulled pork. Other options would be ground turkey or chicken or even ground beef. Really, whatever you have on hand, you can make work!
What if my family doesn’t like cruciferous veggies?
We like adding extra veggies and greens into these healthy ramen noodles, and typically we just get the cruciferous veggies mix at Trader Joe’s. You can go with what you have on hand or whatever sounds good though. Celery would be tasty and add a little crunch. For the greens though, we definitely recommend something heartier like kale versus spinach. Spinach will just get overly wilted. Pick whatever sounds good and makes your ramen noodles colorful!
Storing and reheating your ramen noodles
You’ll notice in the instructions, we have you store the pork and veggies in mason jars, and then the broth mixture in separate mason jars. This is so that the soup ingredients don’t get mushy. All you need to do is heat up the broth mixture, either on the stove or in the microwave, and then pour over the pork and veggies. Let it sit for 1-2 minutes to heat up all the ingredients, and then stir and enjoy!
