One of the best foods to make in a pressure cooker is dry beans. It is fast and you can have these black eyes peas from the pressure cooker to the table in 40 minutes in total. I love beans a lot and I make it at least once a week. I grew up eating beans, not many liked it at the time but parents often tell their children beans would make them grow taller and that seemed to do the trick. In West Africa, Nigeria, beans is a popular dish and apart from cooking it as a one-pot meal, we sometimes peel the beans and blend to make a food called Moi Moi (beans pudding) or Akara (fried beans fritters). I love eating them all but my favourite is the one-pot recipe. Black eyed peas is delicious, healthy and I can’t get enough of it. I get a second helping of this beans dish every time I make it.
Southern Black Eyed Peas or
Hopping John
In southern America, black eyed peas are served on new year’s day with collard green for good luck and wealth throughout the year. It is also called hopping john’s stew or hopping’ john when served with rice and considered soul food. Today’s recipe has my own little tweak to the original southern black eyes peas recipe that is known for its smokiness from the bacon, ham hock or smoked turkey used. Although I used smoked bacon in this recipe, the overall flavour is mild, and I didn’t add any greens to it. Also, I didn’t leave this simmering on medium heat for hours enending as I used my trusted instant pot pressure cooker. This made the cooking process faster. If you would be cooking the southern beans style, don’t forget to add ham, ham hock or smoked turkey.

How to make black eyed peas in an instant pot
Let me show you how to make the best and the most delicious instant pot black eyed peas recipe following these simple steps. Remember this recipe doesn’t require soaking but if you would rather soak the beans, then reduce the cooking time by 10 minutes. Step 1: spread the black eyes beans on a tray and pick out any visible dirt in the beans, then transfer it to a bowl and rinse under cold water and set aside. Step 2: Start by sautéing the onions and bacon in olive oil in the instant pot for some few minutes until onions become soft and the bacon is no longer translucent. Step 3: Carefully pour the chicken stock over the sautéed bacon and onions and stir to combine Step 4: Add the washed beans, chopped tomatoes, chilli, smoked paprika, salt and stir to combine. Step 5: Close the lid securely and turn the valve to sealing position. Select high pressure and set the timer for 20 minutes or 18 minutes if you would like the beans firmer. Once the beans have completely cooked and the timer beeps, do a natural pressure release for 10 minutes then quick pressure release if the IP hasn’t completely depressurised at this time. Step 6: Open the lid and stir the beans to combine, check for salt and seasoning and adjust to taste. Serve with rice, try this instant pot coconut rice, bread or cornbread.
Stove Top Black Eyed Beans
Cooking dry beans on the stove top without first soaking it is easy, although it might take a little longer than if soaked. I personally don’t soak my beans before cooking it. If you would be soaking the black-eyed beans before cooking then cover with enough water about 4 inches above the beans, cover with a cling film and leave to soak overnight or at least 4 hours. Following the same method as the instant pot pressure cooker, saute the onions and bacon, add the beans then cover with water or broth and simmer on medium heat for 30 minutes. Check on the beans and taste test to check if they are tender. Add the rest of the ingredients and, add more water or broth if need be and continue to cook until the beans is tender to your liking. Turn off the heat and serve the beans as desired.
Can I Make This Instant Pot Black Eyed Peas Recipe Vegan Or Vegetarian
Yes, you can. Do this by omitting the bacon or any other meat choice and cook the beans with vegetable broth, oil, seasoning and pepper. If using canned black eyed peas, check the labels for the ingredients to be sure it is free-from.

One cup of cooked black eyed peas roughly contains 198 calories. It is healthy, nutritious, gluten-free and a good source of fibre. Although high in carbohydrate (complex carbohydrate which is good for the body), it is a good source of protein and vitamin.

Other ways to cook dry beans is by soaking it for some few hours before cooking it. You can either cook on the stovetop, crockpot or in a pressure cooker.
